Wangyachi Chutney is a paste-like condiment of mashed eggplants, onions, ginger, garlic, green chillies and some common spices and condiments. After the side dish is prepared, squeeze in some lemon juice, add some coriander leaves and stir well. Serve immediately or store in an air-tight container.
