Wangyache Bharit is a classic Maharashtrian version of minced eggplant, that is perked up with onions, peanuts and some common kitchen spices and condiments. The eggplant is roasted and mashed and the sautéed onions and crushed roasted peanuts are subsequently stirred in, along with a seasoning of tempered spices and condiments such as mustard, cumin, curry leaves, garlic-green chilli paste, garammasala and powdered coriander and turmeric. You can replace the garam masala with goda masala or kanda-lasun masala. Serve with a variety of coarse flatbreads, a lemon wedge and slices of onion.
