Cluster beans are dipped in a mixture of fresh yogurt, cumin powder and salt and then dried in the open two or three times till there is a thin layer of the tangy yogurt. Thoroughly dried in this form, the beans can be fried in oil at short notice to add a unique tangy crispy accompaniment to a meal.
