Walachi Aamti is a Maharashtrian dish prepared using sprouted and peeled bitter field beans, freshly grated coconut and a medley of other vegetables and spices. Sliced onions, grated coconut and a ginger-garlic paste are sautéed in a heavy-bottomed pan and subsequently allowed to cool before it is ground into a paste. Curry leaves and asafoetida are mixed into tempered mustard seeds, followed by chopped onions, turmeric and red chilli powder. Chopped tomatoes and potatoes can be added to the curry (optional), before the bitter field beans are added and cooked in a sufficient amount of water. Garam masala (blend of ground spices) and the spiced coconut paste is stirred into the curry and then allowed to simmer. This dish is served hot and commonly paired with bhakris (coarse flatbread), steamed rice and lehsuni dal tadka (garlic and lentil-based soup).
