Vatli Dal is a snack that is prepared by frying a mixture of coarsely ground Bengal gram and green chili paste and subsequently sautéing it with tempered mustard seeds, curry leaves, cumin seeds, asafoetida and turmeric. The mixture is finally garnished with chopped coriander leaves and a drizzle of lemon juice. This Malvani tea-time snack is popularly consumed with phulkas (puffed flatbread cooked on a pan as well as a direct flame) and Gobi ke Kofte (savoury minced cauliflower fritters).
