Vatanyachi Usal is a delectably spiced curry of white peas, onions, tomatoes, fresh coconut and a variety of common kitchen spices and condiments. Adding moth beans, sprouted green gram or other such lentils to this curry is entirely optional. This warm, spicy curry is flavoured with whole spices such as bay leaf, cinnamon and curry leaves, along with powdered red chillies and turmeric, as well as garam masala or goda masala (aromatic spice blends). A little jaggery and salt are added to taste and Vatanyachi Usal is finally garnished with freshly chopped coriander leaves.
