Upwas Kachori are crunchy stuffed snack balls that can be consumed during days of fasting. The stuffing utilizes ingredients such as fresh coconut, ginger, green chillies, cashew nuts, lemon juice salt, sugar, cumin and coriander that are tenderly cooked in clarified butter and blended into a paste. The kachori coating is made using a dough that is prepared with samo rice flour, sago pearls powder and mashed potatoes. Upwas Kachori are hand-rolled and coated and subsequently deep-fried in oil until golden-brown. Serve with a chutney of your choosing!
