Udadacha Ghut is a spiced curry originally from Khandesh in Maharashtra, that is prepared using split black gram, split black chickpeas, shredded dry coconut, green chillies, onions, garlic cloves, Khandeshi masala and a few other common spices. Soaked lentils are pressure-cooked until soft and mashed into a paste. Separately pan-fry shredded coconut, green chillies and the chopped onion-garlic mixture. All of the above are blended into a mixture and then sautéed in a pan along with Khandeshi masala, red chilli powder, salt, and the lentil-based paste. Water is added to get a curry-like consistency and the contents are boiled until well-done. Garnish with chopped coriander leaves.
