Tomato Omletes are vegetarian breakfast pancakes that make use of chickpea flour, chopped vegetables and a range of spices and condiments. The batter is prepared by mixing the flour, garam masala (mixture of ground spices), turmeric powder, asafoetida, chilli powder, salt and water with a whisk in a large bowl. Chopped tomatoes and other vegetables such as onions, green chillies, ginger and coriander are added to the batter at this stage. The pancakes are prepared using this batter mix on a hot pan coated with oil and subsequently served hot with mint chutney or tomato ketchup.
