Tilachi Chutney is a spicy accompaniment that uses roasted sesame seeds as the primary ingredient. This spicy condiment is often used as a flavour-enhancer that goes well with a wide range of Maharashtrian cuisine. Sesame seeds are dry roasted until golden brown and cumin seeds are added to this until it begins to release a fragrant aroma. Desiccated coconut is added to this and dry roasted as well before the mixture is removed from the pan and allowed to cool. Finally, red chilli powder, salt and garlic cloves are added to the mixture in the desired proportions and blended into a coarse powder.
