Tikhat Purya or Masala Purya are deep-fried flatbread snacks made with wheat flour dough and a variety of common kitchen spices and condiments. A little chickpea flour and sesame seeds are mixed into the dough along with some powdered turmeric, red chilli, bishop’s weed and coriander as flavour-enhancers. The dough is made into small balls, flattened with a rolling pin and deep-fried in oil until both sides are well-browned. Tikhat Purya can be stored in an air-tight container for 7-8 days and therefore make great tea-time snacks that are easy to transport.
