Pan-Fried Rice with Sautéed Vegetables

Tawa Pulav is a popular Mumbai street food specialty that involves pan-frying rice along with some sautéed vegetables and a variety of herbs and spices. One can also make this dish at home; it is a great way to make use of leftover rice. Pav-bhaji masala spice blend gives the warm flavours to the tawa pulav, while red chilli powder is added to taste for the heat. Sautéed tomatoes, onions, carrots, potatoes and green peas commonly feature in this preparation, while lemon juice and freshly chopped coriander leaves are used as a garnish.
