Among the many specific options for permissible diets during rituals and fasts, are the millets, particularly samo rice. This particular preparation with samo rice is additionally even more versatile because only one item is sufficient to play the part of the grain (rice) and its accompaniment (the curry). The samo rice is cooked along with potatoes, a tempering of cumin seeds in clarified butter, buttermilk, some sugar, salt to taste and some crushed peanuts. When served hot, Tandul-Aamti nicely fills in the constraints of the fast as well as the needs of the hungry.
