Surnachi Bhaji, a delectably spiced curry made with pressure-cooked yam cubes, is commonly paired with Indian flatbreads as part of a simple dinner. The curry base is made of yoghurt and tomato puree, flavoured with ginger, cinnamon sticks, cloves, cardamom, garam masala and powdered turmeric and red chillies. Steamed green peas or peanuts are a healthy addition to this dish and freshly chopped coriander leaves can be used as a garnish.
