Shevayacha Upma is a light and simple breakfast preparation made using rice vermicelli, a variety of optional vegetables (such as green peas and carrots), roasted peanuts and some common kitchen spices and condiments. First, the vermicelli is cooked separately while a mixture of oil-tempered mustard seeds, cumin seeds, asafoetida, curry leaves, green chillies, chopped onions and garlic is prepared. The vermicelli is then stirred into the mixture along with some turmeric powder, salt, sugar and water. After the water is absorbed, add the roasted peanuts and cook some more. Finally, garnish Shevayacha Upma with chopped coriander leaves and serve with a dollop of ghee (clarified butter) and lemon juice.
