Shepuchi Bhaji is a simple stir-fried preparation of dill greens and green gram that has a distinct flavour and high nutritional value. Tempered mustard and cumin seeds are sautéed along with finely-chopped onions, garlic and green chillies. Water-soaked green gram, turmeric powder and some water are stirred in and the mixture is cooked. Dill greens are added and tossed with some salt as seasoning (the volume of the greens will reduce after cooking so use salt accordingly). This bhaji goes well with bhakris (coarse unleavened flatbread) or varan-bhaat (pigeon pea split bean curry and rice) along with some other side dishes.
