Sheer Khurma is a rich milk-based dessert that is commonly consumed during Eid ul-Fitr; a Mughlai pudding that makes use of roasted vermicelli, dried fruits and jaggery. First, the vermicelli is roasted in clarified butter until golden-brown. Dried fruits such as dates, raisins, cashews, almonds and pistachios are chopped, added to the vermicelli and then sautéed for a while. Second, milk is brought to a boil and stirred intermittently until it thickens. The vermicelli and dry fruits are then stirred into the milk and the whole mixture is allowed to cook until the vermicelli is soft and the milk has reduced significantly. Serve the pudding hot and garnish with saffron strands, cardamom powder and rose petals.
