Shankarpale are deep-fried snack bites made with a dough of refined flour, a little semolina and milk, which are usually diamond-shaped. Shankarpale can be made sweet, sour or spicy, with minor variations in recipe. After the bits of dough are deep-fried in clarified or regular butter, it is allowed to cool on absorbent paper before it can be stored in an air-tight container. It is one of the favorite foods prepared and consumed in large quantities around Diwali.
