Sanja is a quick vegan breakfast preparation that is similar to Upma (another type of savoury semolina porridge), except that it has a prominent amount of turmeric powder and chopped onions. Sanja uses dry-roasted semolina cooked in some water with some lentils, vegetables and a tempering of spices and condiments. It is commonly garnished with freshly chopped coriander and served with a lemon wedge on the side.
