Sabudanyachi Kheer is a pudding-like dessert preparation of sago pearls, milk, sugar, dry fruits and nuts, cardamom powder and saffron that is popularly consumed during days of religious fasting. Warm milk is slowly added to water-soaked sago pearls that are being heated over a medium flame in a thick bottomed pan. Sugar and cardamom powder are stirred in and the mixture is allowed to cook; occasionally keep stirring. Once cooked, add the dry fruits and nuts of choice and garnish with some strands of saffron. Sabudanyachi Kheer is a delicious dessert that can be consumed hot, warm or cold.
