Sabudana Wada is a traditional Maharashtrian tea-time snack with a crispy cover and a soft texture on the inside. The main ingredients used to make these deep-fried fritters are tapioca pearls, potatoes, peanuts and an assortment of herbs and spices. Some recipes recommend adding a little flour before frying in order to make the fritters crispier. This is a classic snack that is consumed during periods of fasting.
