Kolhapuri Red Curry

Rassa is a classic Kolhapuri curry flavoured with whole spices and some spice blends that give it a characteristic red colour. Cinnamon, cloves, peppercorns, sesame seeds and poppy seeds are tempered with some oil, before some onions are sautéed with the mixture. Desiccated coconut is cooked with the mixture before it is allowed to cool and blended into a paste. This paste is then heated with some cooking stock, garam masala powder and red chilli powder and brought to a boil. The remaining onions are sautéed in oil with some Kolhapuri masala and mixed into the curry. Kolhapuri Rassa is usually served hot with sorghum flatbreads and steamed rice.
