Sweet and Sour Lemon Sauce

Raslimbu is a thick, tangy sauce made from lemon juice, jaggery and some common spices and condiments that makes for a delicious accompaniment with puris (fried round flatbread) or polis (unleavened flatbread). Roasted spices such as peppercorns and cinnamon are powdered along with some tempered mustard and fenugreek seeds. Oil-fried red chilli powder and turmeric powder are prepared and kept aside. These spice powders are stirred into a thick mixture of lemon juice and jaggery syrup and kept aside for at least a week for the Raslimbu sauce to mature.
