Pulav is a vegetarian steamed and herbed rice preparation that is usually consumed with raita (yoghurt-based accompaniment), pickles and roasted papads (traditional crisps). This aromatic rice recipe allows for many minor variations in the ingredients and can even be prepared in a pressure-cooker/pot/pan! One can use whole spices to prepare an aromatic pulav or can even use a ground spice blend of pulav-biryani masala! The choice of rice, vegetables, spices and dry fruits/nuts as well as the amount of water used is of consequence for the flavours, aroma and consistency of the pulav.
