Policha Ladu are another thoughtful and delicious preparation of the leftover unleavened flatbread, whole wheat flour, jaggery, dessicated coconut, milk, cardamom, clarified butter and pistachios (optional). The flatbread is shredded into bits and toasted in some clarified butter on a thick-bottomed pan. The toasted shreds are then blended into a coarse mixture along with the pistachios and cardamom powder. The powdered mixture is stirred into some jaggery syrup with the wheat flour and desiccated coconut and heated on a low flame. Some milk is finally stirred into the mixture and it is allowed to cool a little before the Policha Ladu are hand-rolled and ready to serve.
