Phodnichi Poli is a thoughtful recipe that uses leftover polis (unleavened flatbread), onions, peanuts and some common kitchen spices and condiments. Shredded polis are sautéed with a tempering of mustard seeds, cumin seeds, asafoetida, curry leaves and green chillies. This dish can be perked up with some finely chopped onions. It is cooked until it turns a light brown colour, while stirring in some salt, sugar and spinach leaves. Finally, serve Phodnichi Poli hot with a lemon wedge.
