Palakachi Chutney is a paste-like condiment prepared using spinach, tomato, coriander, roasted lentils and common spices and condiments. Most of the ingredients are sautéed in some oil and allowed to cool before the mixture is blended into a paste along with coriander, salt and water. Finally, some lemon juice and a tempering of spices are stirred into the chutney and it is ready to serve.
