Snake Gourd and Yoghurt Curry

Padwalachi Kadhi is a mildly-spiced curry made of snake gourd and yoghurt that is commonly served with steamed rice. Pieces of snake gourd are tenderly cooked with a range of spices and condiments such as mustard and cumin seeds, powdered red chillies and turmeric, salt and curry leaves. The mixture of beaten yoghurt and coriander leaves are then stirred in and the Padwalachi Kadhi is ready to serve.
