Snake Gourd in Lentil Curry

Snake Gourds are an extremely rich source of minerals and vitamins and therefore have been used extensively in everyday food. This pigeon pea and gram flour curry uses pieces of snake gourd that has been seasoned with a simple tempering with spices such as coriander seeds, asafoetida, cumin seeds, turmeric. Freshly scraped coconut, some peanut powder, kokum, jaggery and gram flour round up the healthy and hearty fare.
