Padvalachi Bhaji is a healthy and vegan dry preparation of chopped snake gourd and Bengal gram, further flavoured with some freshly grated coconut, coriander leaves and some common kitchen spices and condiments. Padvalachi Bhaji makes for a wholesome side dish when paired with chapatis (unleavened flatbreads) or varan-bhaat (steamed rice and a lentil-curry).
