Olya Haldiche Lonche is a super healthful special Maharashtrian pickle recipe made using fresh turmeric and some common kitchen spices and condiments that is usually prepared and consumed during the winter months. The fresh turmeric and ginger are sliced into juliennes and mixed with ginger, green chillies, salt and lemon juice. Tempered mustard and cumin seeds are powdered and added to the mixture. Olya Haldiche Lonche is stored in a glass bottle and kept under the sun for about 8 days for it to be well seasoned.
