Minced Eggplant Cooked In Coconut Milk

Naralyachya Doodhatil Wangyache Bharit is a special version of roasted and mashed eggplant cooked in a coconut milk gravy that has been perked up with finely chopped onions, a little jaggery, roasted peanut powder, grated coconut and some common kitchen spices and condiments. Garnish with fresh coriander leaves and serve with a variety of unleavened Indian flatbreads.
