Bite-Sized Mung Bean Fritters with Spicy Curry

Moongdal Wadi Rassa is a classic Maharashtrian recipe that is prepared by cooking bite-sized Mung Bean fritters in a spiced curry made of a tomato and onion paste. The fritters are fried and placed aside while the ingredients for the curry are sautéed and ground into a paste. The fritters are then slowly cooked in a watered-down paste until they turn soft. Moongdal Wadi Rassa is served hot with a garnish of freshly chopped coriander leaves.
