Moogache varan is a lentil-based curry with green gram as the primary ingredient. Green gram is separately soaked in water for a while and then mixed together with water, salt, turmeric powder and diced tomatoes and onions. This mixture is pressure-cooked while tempering mustard seeds, cumin seeds, asafoetida, curry leaves and chilly powder separately in some oil. The tempered mix is then stirred into the hot soupy preparation and fresh coriander leaves are used as a garnish. This dish is usually served hot with chapatis (unleavened flatbread) or steamed rice. A simpler variation leaves out the tempering, in which case, savoury accompaniments such as pickle, papad or chutney complete the serving.
