Moongache Dhirde are soft, savoury Maharashtrian pancakes that are primarily prepared using green gram and black gram. These wholesome pancakes are a rich source of protein, simple to prepare and easy to digest. The gram (after soaking overnight) is ground to a paste along with green chillies, garlic cloves and coriander leaves. Water and a sprinkle of salt are stirred into the paste to prepare the pancake batter that has a thick consistency. The dough is flattened into the shape of pancakes onto a large frying pan and then cooked on a medium flame using oil. These pancakes can be served with a wide variety of thechas (coarsely powdered spiced condiments) and chutneys (paste-like spiced condiments).
