Matkiche Varan is a spicy, flavourful curry prepared using sprouted moth beans that is usually consumed with chapatis (unleavened flatbread) or steamed rice. The key ingredient used in this preparation is goda masala: a blended mix of aromatic spices that give the curry a mildly sweet flavour. The spices used in the goda masala blend include cinnamon sticks, whole black peppercorns, cloves, bay leaves, black stone flower, cassia buds, carom seeds, asafoetida, dried turmeric, fenugreek leaves, coriander seeds and cumin seeds. Tempered curry leaves and mustard seeds can be mixed into the curry as a flavour-enhancer.
