Matki Bhel is a delectable mixture of puffed rice, boiled sprouted moth beans and an assortment of vegetables, spices and condiments. The layered flavours are primarily because the chutneys used: a spicy coriander-based green chutney, a sweet and sour tamarind-based chutney and a spicy chutney of garlic and red chillies. Matki Bhel also includes sev (spiced chickpea noodles), chopped vegetables, jaggery, lemon juice, chaat masala and other powdered spices such as powdered dry mango, Kashmiri red chillies, dry ginger and cumin. Black salt is added to taste and Matki Bhel is finally garnished with shev (crunchy chickpea noodles) and finely chopped coriander leaves.
