Green Peas in an Onion-Tomato Curry

Matarachi Usal is a staple Maharashtrian dish of steamed green peas and diced potatoes in a spicy gravy made of onions and tomatoes. This curry is flavoured with red chilli powders (Byadgi and Kashmiri variety), garam masala (aromatic blend of ground spices), asafoetida, turmeric, curry leaves and a ginger-garlic paste. Regulate water added to get the desired consistency. Matarachi Usal is usually served hot along with unleavened flatbreads and a salad.
