Matar Karanji are special deep-fried dumpling snacks with a stuffing made of fresh green peas, freshly grated coconut and a wide range of spices and condiments. The dough for the crusty cover is prepared using refined flour, semolina, salt, clarified butter and some water. The stuffing mixture is prepared by grinding coconut, coriander, mint leaves, green chillies and cumin seeds into a smooth paste and subsequently stirring this paste into a bowl with green peas, carom seeds, salt and lemon juice. Small pieces of dough are hand stuffed with the mixture and then deep-fried in oil on a medium flame until the dumplings turn golden-brown. They make a yummy snack with a good chutney at hand!
