Masurachya Daliche Varan is a simple preparation that uses split red lentils, finely chopped onions and tomatoes and some basic household spices and condiments. The lentils are pressure-cooked and kept aside. The chopped vegetables are sautéed along with some tempered cumin seeds, ginger-garlic paste, chopped green chillies, whole dry red chillies, turmeric powder, red chilli powder, garam masala powder (blend of ground spices) and asafoetida. The cooked lentils are added to the sautéed mixture along with some water and salt and allowed to simmer until well-cooked. Finally, squeeze in a little lemon juice and sprinkle some finely chopped coriander as a garnish.
