Masala Pav, a classic snack that prominently features in Mumbai street cuisine, consists of ladi paav (buns of soft bread) soaked in a spicy curry. The curry is a mashed mixture of tempered cumin seeds, finely chopped onions, capsicum and tomatoes sautéed in butter, a red chilli-garlic paste, some salt, chilli powder, lemon juice and water. Individual buns are sliced and allowed to soak in the masala on a hot pan coated with melting butter. Garnish with freshly chopped coriander and serve with a lemon wedge.
