Stir Fry of Amaranth Leaves and Sprouted Green Gram

Maathachi Bhaji is a highly nutritious and simple stir fry of amaranth leaves and green gram. First, chopped amaranth leaves and moong sprouts are pressure-cooked with some water and salt. Second, tempered mustard seeds and asafoetida are sautéed with chopped garlic and onions. Finally, red chilli powder, turmeric powder and jaggery are stirred in along with the pressure-cooked leaves and sprouts and sautéed well on the pan.
