कोथिंबीर वडी / Kothimbir Vadi

Savoury Coriander and Chickpea Flour Fritters

Kothimbir Vadi are soft smooth fritters made of chickpea flour, coriander leaves and an array of spices. They are commonly paired with mint chutney or coconut chutney. A paste of ginger, garlic and green chillies are blended together with coriander leaves, asafoetida and some powdered turmeric, red chillies, coriander and cumin. Crushed peanuts are then blended into the same mixture along with white sesame seeds, gram flour, salt and some sugar. Water is stirred into the mixture to give the batter a thick consistency. The batter is then steam cooked, sliced into diamond shaped bite-sized pieces and then shallow/deep fried until golden-brown.
