Kobichya Wadya are special bite-sized fritters that are prepared by steaming and frying a dough made of cabbage, spring onions, a mixture of flours and some common kitchen spices and condiments. Chickpea, sorghum and rice flours are used to prepare the dough, further spiced with a green chilli-garlic paste, cumin seeds and powdered red chillies and turmeric. Grated cabbage releases moisture so there is no need to add extra water. The dough is flattened, rolled into bite-sized pieces, steam-cooked and then fried before it is ready to be consumed.
