Kobichi Bhaji is a dry stir-fried preparation of finely chopped cabbage, Bengal gram and some common spices and condiments. Soaked Bengal gram and the cabbage are sautéed in oil along with a tempering of mustard/cumin seeds, asafoetida, curry leaves, garlic cloves and green chillies. One can also perk up this simple side dish by adding potatoes, tomatoes, green peas and some other vegetables of choice.
