Kheer is a delicious dessert pudding prepared using rice, milk, nuts, cardamom powder and saffron. This simple preparation only requires a single pot in which the kheer is allowed to simmer while being stirred continuously. Alternate versions of this recipe might replace raw rice with refined flour vermicelli and/or coconut milk instead of milk as the base. Various sweeteners can be used according to one’s taste and preference such as jaggery, condensed milk, brown sugar and regular sugar, with implications for the correct procedure to be followed while preparing the kheer. Sliced/Chopped/Blanched almonds, cashews and unsalted pistachios are used to add a crunchy texture and nutty flavours. Before serving the kheer, rose water and golden raisins can be added to introduce some light, fruity flavours to the pudding.
