Khalgute is a special curry preparation that originated in Ahmednagar district that has a spiced coriander and peanut paste base. This simple curry is a base preparation that has many variations in recipe, where one can add certain vegetables or even traditionally cooked sandge (black gram crisps) to perk up this dish. Serve hot with steamed rice or coarse unleavened flatbread.
