Kela-Rajgira Puri are delicious Indian fried and puffed breads made of amaranth seed flour and ripe bananas, usually consumed during days of religious fasting. Grate ripe bananas into a bowl with amaranth seed flour and stir it in along with rock salt, a green chilli-ginger paste, clarified butter and some cumin seeds. A dough is prepared using very little water to avoid making it sticky. Small pieces of dough are flattened by hand and then deep-fried in oil over a medium flame until the puris turn reddish brown. Drain the oil, place the puris on an absorbent paper (to prevent them from becoming soggy) and serve hot!
