Stir Fried Spine Gourd

Kartulyachi Bhaji is a mildly sweet and spicy stir-fried preparation of spine/teasle gourd; a vegetable that is mostly available during the monsoon season. The main flavour enhancers are tamarind pulp, jaggery, grated coconut, mustard seeds, curry leaves, asafoetida and powdered red chillies and turmeric. Kartulyachi Bhaji is commonly served with rice and spiced drumstick curry and/or a variety of Indian flatbreads.
