Sweet Sour Bitter Gourd Curry

Karlyachi ChinchGul Ghalun Bhaji is a diabetic-friendly, sweet and sour curry of sliced bitter gourd cooked in a thick paste of jaggery, tamarind, onions, fresh coconut and a variety of common kitchen spices and condiments. Both the regular and Kashmiri variety of red chilli powder, turmeric powder and asafoetida add certain warm flavours to this dish. Regulate the water added to get the desired consistency. Serve with a variety of Indian flatbreads and stir-fried vegetable preparations. This curry is commonly prepared on Sarva Pitri Amavasya: the day of the new moon after afortnight of offerings to deceased family members during the annual Pitru Pandhravda (the Forefathers’ Fortnight).
